How To Make Reindeer Cupcakes
I like to keep things as simple as I can in the kitchen especially in the run up to Christmas when I always seem to be so pushed for time. To make this Christmas reindeer cupcake recipe really simple I pop the oven on to pre-heat to 180C and then use the “all-in-one” method to make the sponge.
I weighed out the butter, sugar, eggs and flour straight into my food processor and whizzed all the ingredients together for a couple of minutes until smooth.
I chose some colourful Christmas cupcake liners and filled 12 of them with the batter and popped them in the oven for 15-20 minutes until risen and golden.
While the cupcakes were cooling I made my chocolate butter cream topping. Using my food processor again, I poured in the melted butter and sieved the cocoa and confectioners sugar on top. I whizzed it all up until smooth and glossy.
Next I cut each Curly Wurly into thirds to make the reindeer cupcakes antlers. The Curly Wurlys work so well don’t you think? The toffee and chocolate taste delicious too!
It’s really easy to add the antlers to the reindeer cupcakes by gently pushing the chopped Curly Wurly pieces into the sponge base.
To give my reindeer cupcakes a furry appearance I used a piping nozzle with lots of little holes and randomly covered the top of each cupcake. You don’t need any piping skills for this and it’s great fun for kids to do too.
To bring the reindeer cupcakes to life I added some candy eyes and a red smartie nose.
Reindeer Cupcakes are great fun and very festive. It’s a really easy recipe so a lovely way to get cooking with the kids this holiday. Why not bake some for a family treat or a perhaps a Christmas bake sale or Christmas party?
